• 2 cups all purpose flour (can be gluten free with 1 tsp Xanthan gum)

• 2/3 cup sugar

• 1 tsp baking powder

• 1/2 tsp baking soda

• 1 tsp salt

• 1 tsp cinnamon

• 1/2 tsp ground ginger

• 1/2 tsp ground cloves

• 1/2 tsp ground nutmeg

• 1 cup pumpkin (fresh pumpkin comes out the best. See our pumpkin pie recipe for how to use a fresh pumpkin)

• 1 cup unsweetened soy milk

• 1/2 cup canola oil

• 2 tsp apple cider vinegar

• 1 tsp molasses

• 1 tsp vanilla

• 1/2 cup chopped pecan

or walnuts

Pumpkin Bread (GF)

Preheat oven to 350. Lightly grease a 9x5 bread pan.


Whisk all dry ingredients together (except nuts) in a large bowl.

In a food processor, blend all wet ingredients until combined.


Combine the wet ingredients with the dry and mix until just combined. Do not overmix. Fold in nuts.


Bake for 50-60 minutes in bread pan until a tooth pick comes out clean.
