1 tablespoon of Olive Oil

1 Yellow Onion or Sweet Onion 

2 garlic cloves, minced

10 baby bella mushrooms sliced

1 red bell pepper 

1 package extra firm tofu 

1 cup of spinach

1 zucchini sliced

1 tomato diced

pre-steamed broccoli (optional)

3 tablespoons of nutritional yeast

1/2 teaspoon turmeric

1/2 teaspoon paprika

1 teaspoon cumin

Salt and pepper to taste

Vegan shredded cheese

Tapatio (optional)

Simple Tofu Scramble

Add onion and garlic to sauté pan and sauté for 2 minutes. Add mushrooms and pepper and sauté until onions are translucent and peppers tender. Crumble tofu over pan with hands creating a scrambled egg texture. Stir to combine breaking up any large chunks of tofu with a wooden spoon. Add nutritional yeast, turmeric, paprika, cumin and stir in to combine.


Next add the zucchini, spinach, tomato and sauté for 5 minutes or until spinach is wilted and zucchini tender. If using, add pre-steamed broccoli and sprinkle vegan shredded cheese over the top and reduce heat to low for another couple minutes to let the vegan shredded cheese melt.


If you like a little heat, sprinkle with tapatio!
